2 Tablespoons (30 ml) balsamic vinegar or apple cider vinegar
1 turkey breast (skinless, boneless) (approx. 3 lbs or 1 1/3 kg)
16 slices of bacon (1 lb or 450 g)
Dash of salt and pepper
1Preheat the oven to 400°F (200°C).
2Combine the minced garlic, olive oil, vinegar, salt, and pepper in a large bowl. Place the turkey breast in the bowl and cover completely with the olive oil mixture.
3Create a weave using the bacon slices. Place the bacon weave onto the turkey breast and tuck the ends underneath the breast. If needed, use toothpicks to secure the bacon to the turkey breast. Place the turkey breast in a rimmed baking pan.
4Place the baking pan in the oven and bake for 75 minutes until cooked through. Use a meat thermometer to check the internal temperature of the turkey breast reaches 165°F (74°C).
5Remove the turkey breast from the oven and let rest for 15 to 20 minutes before slicing.
